Summer and watermelon are inseparable. Besides tasting terrific, watermelon is also low-calorie, hydrating (perfect for summer!), and loaded with health-boosting nutrients like cancer-fighting lycopene and the amino acid arginine, which research links to weight loss. Watermelon is also a natural source of most powerful antioxidants provided by nature. It is a good source of the antioxidant vitamins C and A to protect us from diseases.
Here are two low calorie, easy and fabulous watermelon recipes that you can bring to your next summer party.
Watermelon Feta Salad
Ingredients:
6 cups watermelon (cubed)
1/2 purple onion (chopped)
1/2 cup feta
1 cucumber
1/3 cup mint leaves (fresh, chopped)
1/2 cup slivered almonds (optional)
Balsamic vinegar (optional)
Directions: Mix ingredients together and drizzle with balsamic dressing.
Watermelon Mint Cooler
This drink is not only delish and refreshing, it is naturally sweetened without the use of refined sugars.
Ingredients:
12 cups seedless watermelon cubes
1/2 cup fresh lime juice
1/2 cup lightly packed fresh mint leaves
2/3 cup cachaca, rum or vodka (optional)
Ice
Blueberries
Raw honey (optional to drizzle on top)
Directions:
1. In a blender, working in batches, puree the watermelon, lime juice and mint until smooth. Transfer the mixture to 2 large pitchers. Cover and refrigerate until ready to use.
2. Divide the liquor, if using, between the pitchers. Top with ice and some fresh blueberries and drizzle with honey.
